By doing duty in the kitchens of Pierre Gagnaire and Charles Barrier before becoming sous-chef to Jean-Pierre Vigato, Bruno Doucet learned the ropes before taking up the reins at La Régalade in Paris’ fourteenth arrondissement. In 2010, he stayed the course and signed with La Régalade Saint-Honoré and now offers his interpretation of the menu at La Régalade Conservatoire with a new twist: a unique, revisited bistro décor. His philosophy: bistronomy! A skilful concoction of local products of only the highest quality and the culinary technique practiced in the greatest multi-starred establishments. Everything is prepared with simplicity and finesse, creating dishes with flavours that bring back memories and values, redolent with meaning and emotion.
